About Us

My name is Trent Jurgensen and I am a lover of food — and seafood especially. I grew up just South of Seattle and have been blessed with being able to spend almost my entire life around water. My love of seafood and eating almost anything put in front of me started when I was fairly young and it still holds true today.

The decision to open a small fish and chip shop has been stirring in my head ever since my wife, Jeanette, and I ate at a little spot in Captain Cook on the Big Island of Hawaii. I enjoy working around food, but wanted to be my own boss and have weekends, evenings and holidays off with my family. After the birth of our first son in 2014, we started working on the business plan for the “The Frying Dutchman” food truck. In May 2015, we served our first meal and haven’t looked back.

We are excited to be Pierce County’s best fish and chip food truck serving wild, sustainable fish, Washington-grown and sourced produce and a wide variety of homemade dipping sauces. We thank our local communities for all your support as we grow our business and fulfill our dreams!
